JAX Vineyard's Block 3 has always produced the best fruit of our JAX Estate in northern Calistoga. This is an intense expression of our unique red rock, alluvial soil at the base of Mount Saint Helena. Making it's debut in the 2013 vintage, this wine has repeatedly scored 94 to 97pts from numerous critics and we believe the 2018 is our best wine yet. Robert Parker's Wine Advocate has already blessed this vintage with a 95-97pt score.
The Craft
The fruit was hand picked and gently processed using our state-of-the-art Pellenc sorting and destemming system. The pristine, whole berry fruit was fermented in a concrete tank fermenter. Time on skins lasted 15-30 days. The finished wine was aged in 100% new, tight grained, French Oak barrels for 22 months. We employ a variety of cooperages for our Bordeaux varieties including Boutes, Sylvain, Taransaud, Gamba, and Alain Foquet. All Jax wines are produced using 100% native spontaneous yeast. Bottled unflitered and unfined. This wine will drink well for 15+ years.
Tasting Notes
Aromas of fresh black cherry, cassis, and bay laurel leap from the glass, along with notes of cedar and cigar box. The palate is fresh and mouthwatering, bringing forth flavors of baked black plums, dark chocolate, graphite and anise. The well integrated tannins are full and coat the mouth, providing great structure and length. This wine is delicious now and will develop gracefully for decades to come.
